These are really something special, they're light and fluffy and so easy to make. It's one of those recipes that you just tip everything into a bowl and mix.

So sure am I that I think anyone can make them, there's nothing to go wrong. You could also use this recipe to make a Classic Victoria Sponge. To add a swirl of buttercream to your batch of cupcakes then why not try my Simple Vanilla Buttercream recipe.

Makes 14

Ingredients
200g Soft margarine or butter
200g Self-raising

200g Caster sugar
1tsp Baking powder
4 Medium eggs
1 tsp Vanilla extract


Method
Preheat oven to 190ºC/375ºF/Gas Mark 5, line a two 12 hole muffin trays with 14 paper cases. 



Beat  the margarine/butter, self raising flour, sugar, baking powder, eggs and the vanilla extract together with an electric mixer until smooth and lump free. 



Spoon into the muffins cases, three quarter filling each cake.


 Bake in the preheated oven for 20 minutes or until golden and firm to the touch, allow to cool on a wire rack.
