One Year Older (but not wiser!!)

It is a funny thing getting older, people look to you for advice, expecting a pearl of wisdom to drop from your lips. I'm not sure that I am any older or wiser than I was ten years ago! My birth certificate says one thing but my mind says another, to be honest I feel like a teenager inside, a slightly giddy one at that.

White Chocolate Rice Krispie Buns

I think we all have memories of making these as a children, now for me at least, the experience has come full circle. My children love nothing more than to make a large batch of these to share around our family and friends. These are perfect for a child's birthday party (or in our case a rainy Friday!) The concept is very simple, melt chocolate and pour it over Rice Krispies, but one important factor can sometimes be overlooked. The ratio of Chocolate to Rice Krispies is 2:1, meaning double the weight of chocolate for the weight of Rice Krispies, otherwise you will have crumbly buns!

Makes 18

Ingredients
250g While chocolate
125g Rice Krispies
60g Mini marshmallows
Coloured Sprinkles

Method
Line two 12 hole muffin tray with papers, set aside.Weigh the Rice Krispies and mini marshmallows and pour them into a large bowl. Melt the chocolate in the microwave in 30 second intervals on full power, stir after each session. Alternatively place the chocolate in an heatproof bowl over a pan of gently simmering water and stir until completely melted. Pour the melted chocolate over the Rice Krispies and marshmallows, stir gently but quickly to combine everything together. Using two tablespoons, fill each paper case and sprinkle liberally with coloured sprinkles before the chocolate sets.
