The cupcakes batter is an all in one recipe - everything goes into your mixing bowl together - they bake in about 20 minutes. The buttercream can be whipped up in less than 5 minutes and although it takes some time to ice each one, I can guarantee that you will have no shortage of helpers when it comes to putting the mini chocolate eggs onto their bed of grass. Eating them is not the only fun you'll have while whipping up a batch...Happy Easter.
Makes 12-14 cupcakes
Ingredients
1 x Qty Simple Cupcakes Recipe
1 x Qty Basic Vanilla Buttercream
200g or 24 Mini chocolate eggs
Piping bag fitted with a grass tip (basically a icing tip with 8 or more small round holes in it) or an open star icing tip.
Method
Make the simple cupcakes (link for recipe above) first, allow to cool completely before decorating. When making the basic vanilla buttercream (link for recipe above) colour it a bright green and place it into your piping bag fitted with your icing tip. If you don't have a grass tip then any open star nozzle will give a similar effect -once your technique is correct.
The technique is as follows, hold the icing bag vertically over your cupcake, placing the nozzle 1-2mm above the surface, apply a small amount of pressure while lifting upwards, release the pressure on the icing bag and continuing to lift upwards. Behold your own beautiful clump of edible grass, repeat until the whole top of the cupcake is looking luscious and green. Top with the chocolate mini eggs...ta da!
