Courgette Salad


This is just divine, I love this fresh light salad and I'm in danger of using it for every meal that I serve! Now my advice is not to make it ahead because it becomes watery, this doesn't impare the take just the look of it, if you want to bring it to a friends BBQ then I suggest that grate the courgette at the party and serve, you'll be the talk of the place!

Ingredients
2 Large courgettes
3tbsp Olive oil
1tbsp Lemon or lime juice
1 tbsp Clear honey
2 tsp Poppy seeds (I used sesame seeds)
1 Small garlic clove , crushed
Salt and pepper , to taste

Method
Grate the courgettes on the coarse side of your grater. ‬Toss them with the olive oil, lemon or lime juice, clear honey, poppy seeds (sesame seeds) and the crushed garlic clove. Add salt and pepper to taste. Serve as soon as possible (or it will get too watery), with sizzling barbecued chicken or lamb, kebabs or burgers.
