Nigella's Quick Chilli


This is my all time favourite meal, especially when I need to be comforted and warmed. The majority of the ingredients are very easily stored in your cupboard until you are in need of a feast. 

This takes no time at all to put together and will satisfy everyone in your family and you can increase or reduce the heat to suit your own needs. 

Serves 4-6

Ingredients
150g Chorizo sausage, cut into half moons
500g Minced beef (minced steak will give a better flavour)
½ teaspoon Ground cumin
½ teaspoon Ground coriander
½ teaspoon Ground cinnamon
3 Cardamom pods, bruised
1 x 400g Jar pasta sauce for pasta
1 x 390g Mixed beans, drained or mixed beans in chilli sauce
60ml Sweet chilli sauce
¼ teaspoon Chilli flakes, for extra heat


Method
Place a large saucepan on a medium heat and get the rice underway.  


Cut the chorizo into half moons and add to the saucepan, toss the chozizo until it begins to crisp and release it's bright orange oil. Add the minced beef to the saucepan and brown on all sides, breaking up any chunks with a wooden spoon.


Add the remaining ingredients, stir to incorporate all the spices and bring to the boil. Reduce the heat and simmer for 18-25 minutes. Serve with boiled rice, grated cheese, some sour cream and chives for a hearty warming meal.
