This is a simple recipe the will add a splash of colour to your chip 'n' dip selection. I am a firm believer that homemade is so much better than the shop bought variety, this is almost as quick as opening a jar and much better for you! The citrus smell of the fresh lime and the vivid colour of the avacado is just mouth watering.

Serves 3-4

2 Ripe avocados
1 Lime, juice
1 Tomato, deseeded and chopped
2 Cloves garlic, finely chopped
1 Chilli, deseeded and finely chopped (optional)
Salt and pepper

Peel the avocados and remove the stone. Mash the flesh with a fork, squeeze the lime juice over the avocado (the lime juice will keep the avocado flesh beautiful and green). Add the chopped garlic, tomato, chilli if using and season with salt and pepper. Serve with tortilla chips or with Chicken Fajitas.
