Peppermint Bark (No Bake)


This is the perfect last minute gift, there is no cooking involved or troublesome tempering. Just melt, sprinkle and serve! Lost of fun to make and looks so impressive when packaged up in pretty bags with a red bow. 
This recipe can be personalised with anything you have in your pantry, crush some Malteasers, cake sprinkles, crushed honeycomb, Diam Bars.......honestly I could go on and on! Have a lots of fun making yours. 

Serves 8-10 people

Ingredients
300g Dark Chocolate, broken into small pieces
50g Milk Chocolate, broken into small pieces
350g White Chocolate, broken into small pieces
1/2 tsp Peppermint essence
4 Peppermint candy canes, crushed 

Recipe Note: The best method of melting chocolate is over a bain-marie, this method ensures that your chocolate will melt without burning -I have burnt a LOT of chocolate, especially white chocolate in my microwave - so to prevent a smoke filled kitchen I'm suggesting the bain-marie. A bain-marie is basically a double boiler and in this case it consists of a saucepan half filled with water over a medium heat and over that saucepan is placed an ovenproof bowl filled with chocolate. The only precaution you have to take is to prevent any water getting into the ovenproof bowl, if this happens your chocolate will seize and go grainy. So be careful of any steam or water droplets getting into your chocolate. 

Method
Place a medium sized saucepan half filled with water over a medium heat, bring to a simmer. Place the broken dark and milk chocolate into a large ovenproof bowl and stir until melted. While the chocolate is melting line a 22cm x 22cm roasting dish with greaseproof paper. Once the dark chocolate mixture is melted add the peppermint essence and pour into the prepared dish, spread evenly with a spatula and chill until firm -30 minutes in a fridge or 15 minutes in a freezer. 

While the dark chocolate mixture is setting, place the white chocolate into a clean ovenproof bowl and melt over the bain-marie, stir to remove all the lumps. when the white chocolate is fully melted pour over the set dark chocolate mixture and spread out evenly, working quickly before the white chocolate sets, sprinkle over the crushed candy canes. Allow to set completely in a fridge or freezer for 1-2 hours, once fully set, break up into bitesize pieces and serve.
