3 Ingredient Frozen Yogurt
The bright and cheery daffodils in my garden nod at me each time I pass, their open faces shining bright in the spring sunshine, but goodness what an unusual year we are having so far. The streets are eerily quiet, I've almost become a hazard on my morning walk, crossing the road without hardly a sideways glance because traffic on the road is almost non existent! I'm sure any parent at this stage has a renewed appreciation for all the teachers across the country, home schooling is tough! I've been furtively googling the Aztecs, rivers of the world and heaven alone knows what I would do without google translate!! Really the only escape I have from all the Covid-19 pandemic talk on the radio and social media is listen to numerous audio-books and cooking! So here it is, I'm happily pooching about in my pantry, racking my brain to come up with yet another idea for dinner and dessert. I have to honest here, I had vanilla yogurts in my fridge that were coming dangerously close to their expiry date.
So after scraping the bottom of our chest freezer and fishing out some frozen strawberries and always having on hand a can or two of condensed milk this was the result. This couldn't be simpler, three ingredients and no ice-cream machine...quarantine cooking at it's easiest.
Yield: 1.2ltrs
Ingredients:
750g Vanilla Greek Style Yogurt
397g Can Condensed Milk
200g -250g Fresh strawberries (or frozen strawberries)
Equipment:
20x10cm Loaf tin or an air tight plastic container with a lid
Large Mixing bowl
Stick blender/ liquidiser
Spatula
Cling Film
Method
Wash the fresh strawberries and dice finely - add a tablespoon of caster or icing sugar to the strawberries for added sweetness if needed - I used frozen strawberries which I allowed to defrost for 1 hour before blitzing with my hand blender. Place in the fridge until needed.
If like me you are using baking tin, line with parchment paper or double lined with cling film.
Add the vanilla yogurt and the entire can of condensed milk to a large bowl and mix to combine.
Gently fold in the fresh for frozen strawberries, aren't the colours beautiful together!
Pour the mixture into the prepared tin, wrap tightly in cling film alternatively place in an air tight container and cover with a lid. Freeze for 8 hours or overnight. Allow to come to room temperature for 15-20 minutes before serving.
