4 Tasty Meals
These four meals have served me very well over the years and if you are looking for some quarantine cooking inspiration then read on. I have cooked these meals too many times to count, they are the perfect spring/autumn recipes when it is still cool and a heart warming meal is just the ticket! I welcome any suggestions you have, like a lot of people I am in need of some new ideas in the kitchen, quarantine cooking can be tedious!!
Ed's Mother's Meatloaf from Nigella Lawson is a hearty feed! It serves 6-8 easily, so if like me you are cooking for 4, you could make up half of the recipe (using 2 of the 3 hard boiled eggs) serve with mash and runner beans and everyone is happy, alternatively make the full recipe and eat the leftovers cold the next day with lashing of English mustard as a cold platter.
There are some meals that are the centre of your repertoire, the one that you keep coming back to time and time again, this is mine, Nigella Lawson's Quick Chilli . It is as the name suggests, quick and so, so tasty. Serve it with boiled rice, mashed potatoes or in tortilla wraps topped with grated cheese....oh soo good!
This is a prepare ahead and leave it to it's own devices kind of meal, Slow Cooker Sausage and Bean Casserole however if you prefer to make this meal in your oven, then listen up. Preheat the oven to 180ºC/350ºF/Gas Mark 4, brown the sausages in an cast iron casserole, add the remaining ingredients using tinned beans only (minus the spinach) cook with the lid on in the preheated oven for 60-80 minutes or until the vegetable are cooked, add the spinach. Serve in warm bowls.
This Chicken and Vegetable Stew is beautiful cooked either with chicken fillets or chicken thighs, most recently I have cooked it mostly with chicken thighs, they have a great flavour and can be bought deboned (a great time saver) in most supermarkets now. Serve with creamy mash or on it's own with crispy french bread.
