Cheese Scones

If you want the perfect scone recipe then go no further, this recipe is inspired by the award-winning Chef and Broadcaster Gary O'Hanlon, you might know him better from the TV series The Restaurant. He made the original recipe on Newstalk in lockdown one and I have been singing their praises ever since!


These cheesy scones are easy to make and turn out perfectly every time, they are my go to recipe for mid week elevenses or served with soup for a light lunch. The mature cheddar adds a little saltiness which goes perfectly with ham or just as they are. Try them I promise you'll enjoy them. 

Recipe adapted from Gary O'Hanlon's Scones Recipe 

Makes 12 scones

Ingredients
500g Strong flour
2 Eggs
33g Baking powder
75g Butter, room temperature
225ml Milk
150g Grated mature cheddar

Method
Pre-heat your oven to 220C /425F/Gas Mark 7, line a large baking tray(s) with parchment paper.


Put all the ingredients -excluding the grated cheese - into a stand mixer with the paddle attachment and mix on a medium speed for 2 minutes or mix by hand with a large wooded spoon for 5-6 minutes. add the grated cheese and mix gently until dispersed through the dough. 


Lightly dust your work surface, roll out the dough to 2 cm thickness. Using a cutter, cut out 12 scones. reuse the scraps until all the dough is used. Brush the tops of the scones with a mixture of egg and milk, don't drip the egg wash down the sides as it will prevent your scones from rising properly in the oven. 


Chill for 30 minutes, brush with egg wash again and sprinkle with some grated cheese for extra cheesiness  (optional). Place into the oven and bake for 15 minutes, test with a skewer, if it comes out clean, they are baked through. If not, give them 3-4 more minutes. 


Serve warm from the oven with soup and lost of butter or toasted as a mid morning snack.
