Cherry and White Chocolate Muffins

 



Cherries are in season and there is no better way to enjoy them than in a muffin with a well deserved cup of coffee! These muffins are a quick one bowl recipe that requires no mechanical intervention, in fact the more gently you are mixing the batter the more tender your muffins will be 🍒 


Makes medium 18 muffins

Ingredients:
380g Plain flour
300g White sugar
½ tsp Salt
1½ tsp Baking powder
125mls Vegetable oil
160mls Milk
2 Eggs
100g - 150g White Chocolate Chips
150g -200g Fresh cherries, halved and stone removed. If using frozen cherries, thaw slightly and drain excess liquid . 

Method 

Preheat the oven to 200ºC/400ºF/ Gas Mark 6. Line two muffin trays with paper cases, set aside. Combine the dry ingredients together in a large bowl, make a well in the centre and add the combined wet ingredients. Fold together very gently, add the cherries and white chocolate chips. Bake in preheated oven for 20 to 25 minutes, until the centre of the of the muffin spring back when gently pressed.
